Haystacks – the 7 Layer Lunch {Recipe Redux}

We all have found ourselves in a lunch rut. Same ol’ same ol’. Sandwiches, leftovers or even that awesome sushi place get tiring.

In my post on Why I am Plant Based, I talked about being Seventh-Day Adventist and following a vegetarian diet. I’m going to let you in on a secret SDA recipe. It’s found at any potluck, party or Friday night vespers gathering.


Haystacks Recipe

The Haystack Formula

Everyone makes haystacks with their own twist, but here is the general formula:

  • Fritos
  • Beans
  • Cheese
  • Veggies
  • Salsa, Sour Cream and/or Guac

I’m sharing with you my 7 layer recipe in hopes of spreading the haystack love far and wide. The amounts can all be tweaked to suit your preferences and hunger.


Haystacks - The 7 Layer Lunch


Makes 1 Unboring Lunch


1 handful Frito chips

1/2 cup warm pinto beans

1/4 cup vegan cheese (Daiya is my favorite)

1 handful shredded green leaf lettuce

1 small tomato, diced

1/3 avocado, sliced

1 green onion, roughly chopped


Starting with the Fritos, layer all 7 ingredients one on top of the other until you have a happy haystack.

    Great idea. Thanks Im gonna try it out.Simple and yummy. Is there Vegan cheese out there that is similar to mozzarella that you now of?
